Veggie Muffins

Ingredients

1 Tomato, handful spinach, ¼ onion (all chopped and mixed together)

100g cauliflower, 100g brussel sprouts or broccoli (chopped fine)

6 whole eggs plus another 6 white only (dozen total)

Directions:

Process/blend all ingredients together adding pink salt, pepper to taste, sprinkle cinnamon and turmeric.

Lightly grease a muffin tin (coconut or olive oil) and pour mixture into sections approx. ¾ full

Add a very small (approx. ¼ teaspoon) dollop of fetta cheese on top each filled muffin and bake approx. 20 mins or until there no liquid/runniness from the eggs (give it a little wobble to check)

*Additional you can add 1 small tin tuna throughout for more filling
