So easy to make these vegan, low gi and NO bake cookies 

 
Ingredients-
3/4 cup peanut butter (natural)
6 tsp stevia granules.
1/4 cup coconut oil
1 3/4 cup rolled oats
1 tsp cinnamon ground
1 tsp vanilla extract
Pinch salt
Rice malt syrup to drizzle
 
Method-
Heat nut butter, milk, coconut oil, stevia in a saucepan on low heat until all melted and smooth.
 
Stir in oats, cinnamon, vanilla and salt. Leg cool slightly.
 
Drop tablespoonfuls onto baking paper pressing down into 2 inch circles.
 
Refrigerate for 2 hours.
 
You can add anything really to these simple cookies.
