Avocado Fries

Ingredients

1 egg

2 cups gluten free breadcrumbs

2 avocados, cut into wedges

Lime to serve

¾ cup greek yogurt

1 tablespoon lime juice

½ clove crush garlic

1 tablespoon fine chopped coriander

Directions Place the egg in a shallow plate and the crumbs in another. Lightly coat the avocado wedges into the egg and then the crumbs to coat. Have a tray with baking paper on the side ready to go. Once avocados are coated lightly spray with olive or coconut oil and season with salt. Bake all together approx. 10-12 mins or until golden brown on 180c

For the sauce combine the yogurt, coriander, lime and garlic and whisk by hand.

Serve with lime wedge for an extra kick!
