Healthy Protein Balls

Ingredients-

3/4 cup cocoa powder
400ml coconut cream
14g stevia granules (or 1/4 cup rice malt syrup)
2 tsp xanthan gum
1/2 tsp vanilla bean extract
1 cup oats
1 serve strawberry protein powder
2 tb 100% peanut butter 

 

Method-


In large bowl whisk coconut cream, cocoa powder, stevia, xanthan gum, vanilla bean, protein powder and nut butter until smooth.
Last in ingredient adding rolled oats before making into 12 balls coated in shredded coconut. Refrigerate for an hour. Texture inside is like a mousse.
